Pie with squash and cheeses from Lemnos

Ingredients (for one pie)
3 tea cups of green squashes cut into slices
1 medium dry onion
2 cloves of garlic
4 organic eggs
100gr of smashed HRYSAFI “kalathaki” cheese from Lemnos
100gr of grated HRYSAFI kaskavali cheese
100gr of grated HRYSAFI melichloro cheese
1/2 tea cup with extra virgin olive oil
1 cup of regular flour
seasonal herbs (mint, dill, parsley)
salt, pepper

Put the onions, the garlic and the herbs in the blender. Mix them in a bowl with the squash. Stir the mixture until homogeneous. Gently beat the eggs and pour in the mixture. Add the grated cheeses, the olive oil, salt and pepper and stir. Then add the flour. Take a tin, grease it, sprinkle a little flour and pour in the mixture with the squash. Bake in the oven at 180 º C for one hour until golden brown.
